Asian Meatballs with Sautéed Shiitakes & Green Beans

We take dinner pretty seriously – no frozen meals or fast food around here. We want nourishing, whole foods that keep our bellies full and bodies healthy. 

Made with immune-boosting ginger, protein-rich pastured pork, and nutritious veggies, this dish is not only great for you, but entirely delicious. Toss together with rice noodles or on top of a salad, and – if you can – save a few of the meatballs for your lunch the next day!


Asian Meatballs with Sautéed Shiitakes & Green Beans


Serves 4

1 lb ground pork
4 tsp fresh ginger, grated
4 cloves garlic, minced
1 shallot, minced
2 tsp + 2 tbsp toasted sesame oil
3 tbsp soy sauce or tamari
1 lb green beans, ends cut off
1/2 quart shiitakes, halved & stems removed (save stems for stock!)

1. Preheat your oven to 350 degrees. In a large bowl, combine ground pork, 2 tsp ginger, garlic, ½ shallot, 2 tsp sesame oil, and 1 tbsp soy sauce until all is thoroughly mixed together.

2. Next, form meatballs about the size of a golf ball, then bake in the oven for 20-30 minute (or until cooked through).

3. While the meatballs are baking, heat about 2 tbsp sesame oil in a pan on medium heat. Sauté shallot and garlic – just until fragrant – then add shiitakes and green beans, stirring often. After a few minutes, add in remaining 2 tbsp soy sauce and 2 tsp ginger.

4. Serve over rice, rice noodles, or a salad – and enjoy!
