Delicious Kale Salad

With the busyness that life throws your way, its important to find balance on your plate between easy meal prep, health, and pleasing your tastebuds. Our trick? Keep it simple

Simple doesn't mean boring, but it does mean getting a little creative. Use this Delicious Kale Salad as your base for a quick lunch or dinner and top it off with your favorite nuts or seeds, grilled salmon, flavorful sausage, or a heap of quinoa for the extra protein to keep you full. Add any other toppings that you love (dried cranberries, sliced apple or avocado, roasted butternut squash) to keep it exciting and "bulk it up" a bit! 

 

Delicious Kale Salad

 

Delicious Kale Salad

Serves 2 (or 4 if served as side salad)

Ingredients

1 bunch kale, de-stemmed and cut into ribbons
1 lemon, juiced (you'll need about 2 tbsp)
2 tbsp extra virgin olive oil
2-3 garlic cloves, peeled & minced
pinch of sea salt & pepper
pinch of red pepper flakes
optional (but recommended): 1/2 cup Parmesan cheese, grated

Instructions

1. Whisk dressing ingredients together - lemon juice, olive oil, garlic, salt & pepper, red pepper flakes - in a small bowl.

2. Pour dressing over kale in a large bowl and massage the kale until it becomes tender and soft.

3. You can either store in an airtight container in the fridge for a few hours (or overnight) to let the flavors really meld together, or eat immediately - your preference!

4. Whenever you're ready to eat, top with the Parmesan cheese, and any other protein or toppings you choose.
