Crown Finish Caves
Crown Finish Caves is a one of a kind cheese aging facility in Brooklyn, New York. It was created by Benton Brown in the 100 year old underground lagering tunnels of the former Nassau Brewing Company. Crown Finish is an affineur, meaning they do not make cheese but rather support other makers by buying their cheese just after production and aging it until it is ready for sales and consumption. It is an old system from Europe that allows each professional to concentrate on what they do best. Though Crown Finish is only two years old, they have won many awards for the cheeses they age and, as their facilities are very small, we are extremely lucky to get our hands on their work down here in DC.
