Grilled Gem Lettuce with Buttermilk Ranch Dressing
This week's Farm Box inspiration comes from those goegeous little heads of gem lettuce. Think of it as baby romaine, but sweeter! This grilled recipe with a buttermilk dressing is a crowd pleasure for all salad enthusiasts and even those who need a bit of convincing
-3-4 heads of baby gem lettuce (1-2 heads per person is perfect)
- 1 carrot
- 1/2 cup of buttermilk
-2 tbs may or full-fat plain yogurt
-Juice of 1 lemon
- Salt and pepper to taste
Cut gem lettuce heads in half, coat with olive oil, and sprinkle with salt and pepper. Turn grill on medium-high and cook for 2-3 minutes until edges are charred.
To make the dressing - whisk together buttermilk and mayo. Add chives and the juice of 1 lemon. Add salt and pepper. Whisk. Add additional lemon juice (as needed with a little squeeze), salt, and pepper to taste. Cover grilled lettuce and enjoy!
