It takes a lot of work to do things simply. At Twig Farm, we do our best to create the conditions whereby the plants and grasses on our 40 acres can be effectively filtered through our herd of 43 Alpine goats and made into a line of simple, rustic cheeses that could never be replicated anywhere else. While our inspiration has come from the traditional natural-rind goat cheeses of the French Pyrenees, we have allowed our specific environment to dictate what sorts of cheeses we make, doing our best to showcase and celebrate the nuances of the milk as it changes from week to week and month to month with a minimum of interventions. Whether propagating our own native cultures or pressing cider from foraged apples to use for our washed wheels, we aim to distill that which makes our land and our herd distinctive.
