Vulto Creamery, a newish and very small artisan cheese producer from Walton, New York, is a one man operation started by Jos Vulto, a former artist from NYC. Like many cheesemakers, Jos got involved in the industry by accident, creating cheese at home and falling in love with production. He built his own creamery and aging facility in 2012 in Walton and now creates cheese twice a week using raw cow’s milk from a local farmer. His cheeses rarely make it past New York, as it is in very high demand from chefs and cheese shops there.
